  • 1 pound Italian sausage, removed from casings
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (15 ounce) container ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into small pieces
  • 2 cups baby spinach, chopped
  • Fresh parsley, for garnish

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth, ricotta cheese, Parmesan cheese, heavy cream, oregano, salt, and pepper. Stir well to combine.
  4. Bring the soup to a simmer and add the broken lasagna noodles. Cook until the noodles are tender, about 10-12 minutes.
  5. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  6. Ladle the soup into bowls and garnish with fresh parsley.
  7. Serve immediately.

Notes

For a richer flavor, use bone broth instead of chicken broth. You can also add other vegetables like zucchini or mushrooms.
