  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, melted
  • 1/4 cup powdered sugar
  • 2 cups white chocolate chips
  • 1 tablespoon coconut oil (optional, for smooth melting)

Instructions

  1. Line a mini muffin tin with paper liners.
  2. In a medium bowl, mix peanut butter, melted butter, and powdered sugar until smooth.
  3. Melt white chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  4. Spoon a small amount of melted white chocolate into each muffin liner, covering the bottom.
  5. Place the tin in the freezer for 10 minutes to set the chocolate.
  6. Add a spoonful of the peanut butter mixture on top of the hardened white chocolate, then gently press down.
  7. Cover the peanut butter layer with more melted white chocolate, smoothing the tops.
  8. Freeze again for at least 30 minutes until completely set.
  9. Remove from liners and serve chilled or at room temperature.

Notes

For extra crunch, sprinkle a few sea salt flakes on top before the final chocolate layer sets.
