  • For the Crust:
  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Filling:
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 8 ounces white chocolate, melted and cooled slightly
  • 1 cup fresh blueberries

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan.
  2. Bake the crust for 8-10 minutes. Let cool completely.
  3. Make the Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Beat in vanilla extract, then add eggs one at a time, beating well after each addition.
  5. Stir in the melted white chocolate until well combined.
  6. Gently fold in the fresh blueberries.
  7. Pour the filling over the cooled crust.
  8. Bake for 55-65 minutes, or until the edges are set but the center is still slightly jiggly.
  9. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly ajar.
  10. Refrigerate for at least 4 hours, or preferably overnight, before serving.
  11. Run a thin knife around the edge of the pan before releasing the springform.
