  • 1 tablespoon olive oil
  • 1 pound beef stew meat, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 cup diced potatoes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Season beef with salt and pepper. Add beef to the pot and brown on all sides. Remove beef from the pot and set aside.
  2. Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  3. Pour in beef broth and scrape up any browned bits from the bottom of the pot. Add diced tomatoes, Italian seasoning, and thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Return beef to the pot. Add potatoes (if using), green beans, corn, and peas. Simmer for at least 30 minutes, or up to an hour, or until the beef is tender and vegetables are cooked through.
  5. Taste and adjust seasoning as needed. Garnish with fresh parsley before serving.

Notes

Serve with crusty bread or grilled cheese for a complete meal.
