Vegan No-Bake Brownies with Dates Nuts

Deliciously rich and fudgy vegan no-bake brownies made with naturally sweet dates and crunchy nuts, perfect for a healthy dessert or snack.

Ingredients

  • 1 1/2 cups pitted Medjool dates
  • 1 cup raw walnuts
  • 1/2 cup raw almonds
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons maple syrup (optional)

Instructions

  1. Place dates in a bowl of warm water for 10 minutes to soften, then drain.
  2. In a food processor, pulse walnuts and almonds until finely chopped.
  3. Add the softened dates, cocoa powder, vanilla extract, salt, and maple syrup (if using) to the food processor.
  4. Process until the mixture is sticky and holds together when pressed.
  5. Line a square baking dish with parchment paper and press the mixture firmly into the dish to form an even layer.
  6. Refrigerate for at least 1 hour to set.
  7. Cut into squares and serve chilled or at room temperature.

Notes

For added flavor, sprinkle a pinch of sea salt on top before refrigerating or add chopped dark chocolate chips into the mixture.
