Turmeric Ginger Chicken Noodle Soup

A soothing and vibrant chicken noodle soup infused with the anti-inflammatory benefits of turmeric and fresh ginger, perfect for boosting immunity and comforting the soul.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon ground turmeric
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups cooked shredded chicken breast
  • 1 cup egg noodles
  • Salt and black pepper, to taste
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger; cook for another 1-2 minutes until fragrant.
  3. Stir in turmeric and cook for 30 seconds to release its aroma.
  4. Pour in chicken broth, then add sliced carrots and celery. Bring to a boil, then reduce heat and simmer for 10 minutes until vegetables are tender.
  5. Add cooked shredded chicken and egg noodles. Cook until noodles are tender, about 7-8 minutes.
  6. Season soup with salt, black pepper, and fresh lemon juice. Stir in chopped parsley just before serving.
  7. Ladle into bowls and enjoy warm.

Notes

For extra flavor, garnish with a sprinkle of chili flakes or a drizzle of coconut milk for creaminess.
