This Turmeric Chicken Soup is a comforting and anti-inflammatory dish perfect for a chilly day. It’s packed with flavor and nutrients to boost your immune system.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 inch ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon black pepper
  • 6 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 cup cooked rice
  • Juice of 1/2 lemon
  • Salt to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add ginger and garlic and cook for 1 minute more, until fragrant.
  3. Stir in turmeric and black pepper. Cook for 30 seconds.
  4. Pour in chicken broth and bring to a simmer.
  5. Add shredded chicken and cooked rice to the pot. Simmer for 10 minutes.
  6. Stir in lemon juice and season with salt to taste.
  7. Garnish with fresh parsley and serve hot.

Notes

For an extra boost of flavor, add a bay leaf to the soup while it simmers. Remove it before serving. You can also add other vegetables like spinach or kale.
