This Turkey Spinach Mushroom Skillet is a quick, healthy, and flavorful one-pan meal combining lean turkey, fresh spinach, and earthy mushrooms for a perfect weeknight dinner.

  • 1 lb ground turkey
  • 2 cups fresh spinach, roughly chopped
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • ½ cup low-sodium chicken broth
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • ½ tsp dried thyme

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté for 3-4 minutes until softened.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add ground turkey, breaking it up with a spoon, and cook until browned and cooked through, about 6-8 minutes.
  5. Add sliced mushrooms and cook for another 4 minutes until softened.
  6. Pour in chicken broth, add salt, pepper, red pepper flakes, and thyme; stir to combine.
  7. Add chopped spinach and cook until wilted, about 2 minutes.
  8. Adjust seasoning as needed and serve warm.

Notes

For extra flavor, top with freshly grated Parmesan cheese or serve over quinoa or brown rice for a heartier meal.
