Turkey Medallions with Orange Teriyaki Sauce

  • 1 lb turkey tenderloin, sliced into medallions
  • 2 tbsp soy sauce
  • 1/4 cup fresh orange juice
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 garlic clove, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame oil
  • 1/2 tsp red pepper flakes (optional)
  • 2 green onions, chopped for garnish
  • Sesame seeds for garnish

Instructions

  1. In a bowl, whisk together soy sauce, orange juice, honey, rice vinegar, grated ginger, and minced garlic.
  2. Heat sesame oil in a skillet over medium-high heat. Add turkey medallions and cook for 3-4 minutes per side until browned and cooked through. Remove from skillet and set aside.
  3. Pour the orange teriyaki sauce mixture into the same skillet and bring to a simmer.
  4. Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
  5. Add red pepper flakes if desired, then return the turkey medallions to the skillet to coat them in the sauce.
  6. Cook for an additional minute to warm the turkey through, then remove from heat.
  7. Garnish with chopped green onions and sesame seeds before serving.

Notes

For extra flavor, marinate the turkey medallions in the orange teriyaki sauce for 30 minutes before cooking.
