  • 1 ½ cups chocolate cookie crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • For the Filling:
  • 12 ounces semi-sweet chocolate, chopped
  • 1 cup heavy cream
  • 4 large egg yolks
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the Ganache Topping:
  • 4 ounces milk chocolate, chopped
  • ½ cup heavy cream
  • 1 tablespoon butter

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar. Press into the bottom and up the sides of a 9-inch pie plate.
  2. Bake for 10-12 minutes, or until set. Let cool completely.
  3. Make the Filling: Place chopped semi-sweet chocolate in a heatproof bowl.
  4. In a saucepan, heat heavy cream, sugar, and salt over medium heat until simmering.
  5. Pour hot cream mixture over the chocolate and let stand for 1 minute. Whisk until smooth.
  6. Whisk in egg yolks and vanilla extract until well combined.
  7. Pour the chocolate filling into the cooled crust.
  8. Bake: Bake for 20-25 minutes, or until the filling is set but still slightly jiggly in the center.
  9. Let cool completely at room temperature, then refrigerate for at least 2 hours to set.
  10. Make the Ganache Topping: Place chopped milk chocolate in a heatproof bowl.
  11. In a saucepan, heat heavy cream until simmering. Pour over the chocolate and let stand for 1 minute.
  12. Add butter and whisk until smooth.
  13. Pour the ganache over the chilled pie and spread evenly.
  14. Refrigerate for at least 30 minutes to allow the ganache to set.
  15. Serve chilled.
