tortilla roll-ups

These easy tortilla roll-ups are a perfect appetizer or quick snack. Filled with a savory cream cheese mixture and colorful vegetables, they’re a crowd-pleaser and simple to make.

Ingredients

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped black olives
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 2 tablespoons chopped green onions
  • 1 teaspoon taco seasoning

Instructions

  1. In a medium bowl, combine the softened cream cheese, cheddar cheese, black olives, green bell pepper, red bell pepper, green onions, and taco seasoning. Mix well until fully combined.
  2. Spread an even layer of the cream cheese mixture over each tortilla.
  3. Tightly roll up each tortilla.
  4. Wrap each roll-up tightly in plastic wrap.
  5. Refrigerate for at least 1 hour to allow the filling to set.
  6. Remove the plastic wrap and slice each roll-up into 1-inch thick pieces.
  7. Arrange the roll-ups on a serving platter and enjoy!

Notes

For an extra kick, add a pinch of cayenne pepper to the cream cheese mixture. Serve with salsa or guacamole for dipping.
