This hearty Tortellini Vegetable Soup is packed with fresh vegetables and cheesy tortellini in a flavorful broth. It’s a quick and easy meal perfect for a cozy weeknight dinner.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (9 ounce) package cheese tortellini
  • 1 cup chopped spinach
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more.
  3. Pour in vegetable broth and diced tomatoes. Stir in Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 10 minutes.
  5. Add tortellini and cook according to package directions, about 3-5 minutes.
  6. Stir in spinach and cook until wilted, about 1 minute.
  7. Serve hot, topped with grated Parmesan cheese if desired.

Notes

For a heartier soup, add a can of drained and rinsed cannellini beans or kidney beans. You can also use chicken broth instead of vegetable broth for a richer flavor.
