  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 9 ounces cheese tortellini
  • 1 cup chopped spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain off any excess grease.
  2. Add the olive oil, onion, and garlic to the pot. Cook until the onion is softened, about 5 minutes.
  3. Pour in the chicken broth and diced tomatoes. Stir in the oregano, basil, and red pepper flakes (if using). Bring to a boil.
  4. Reduce heat and simmer for 10 minutes to allow the flavors to meld.
  5. Add the tortellini and cook according to package directions, usually about 3-5 minutes, or until tender.
  6. Stir in the spinach and cook until wilted, about 1 minute.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with grated Parmesan cheese.

Notes

For a creamier soup, stir in a dollop of heavy cream or sour cream before serving. You can also add other vegetables like carrots, celery, or zucchini to the soup.
