Toffee Apple Pie with Creamy Custard

Delight in a classic toffee apple pie paired perfectly with smooth, creamy custard, combining rich caramel flavors and tender spiced apples for a comforting dessert.

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup cold water
  • 5 medium apples, peeled, cored, and sliced
  • 1/2 cup light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup toffee bits
  • 1 tbsp lemon juice
  • 1 egg, beaten (for egg wash)
  • 2 cups whole milk
  • 3 large egg yolks
  • 1/4 cup granulated sugar (for custard)
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. To make the pie crust, combine flour and butter in a bowl and mix until crumbly. Gradually add cold water until dough forms. Chill dough for 30 minutes.
  3. Roll out the dough and line a 9-inch pie dish. Trim edges and set aside.
  4. In a large bowl, toss sliced apples with lemon juice, brown sugar, cinnamon, nutmeg, and toffee bits.
  5. Fill the pie crust with apple mixture and cover with a second rolled-out dough layer or lattice. Brush top with beaten egg.
  6. Bake for 45-50 minutes until crust is golden and filling is bubbly. Let cool.
  7. For custard, heat milk in a saucepan until just simmering.
  8. Whisk egg yolks, sugar, and cornstarch in a bowl until smooth.
  9. Slowly add hot milk to egg mixture, whisking constantly. Return mixture to saucepan.
  10. Cook over medium heat, stirring constantly until custard thickens. Remove from heat and stir in vanilla extract.
  11. Serve warm slices of toffee apple pie with creamy custard poured over or on the side.

Notes

For extra richness, serve the pie topped with a scoop of vanilla ice cream alongside the custard.
