  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup unsalted butter, cubed
  • 1/4 cup tomato paste
  • 2 tbsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp chili powder (adjust to taste)
  • 1/2 tsp cumin powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan bread, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from the skillet and set aside.
  2. In the same skillet, add onion and cook until softened, about 5 minutes. Add garlic and ginger and cook for another minute until fragrant.
  3. Stir in crushed tomatoes, tomato paste, garam masala, turmeric powder, chili powder, and cumin powder. Season with salt and pepper. Bring to a simmer.
  4. Reduce heat to low and stir in heavy cream and butter. Simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened.
  5. Return the cooked chicken to the skillet and stir to coat with the sauce. Cook for another 5 minutes, allowing the chicken to absorb the flavors.
  6. Garnish with fresh cilantro.
  7. Serve hot over cooked rice or with naan bread.

Notes

For extra flavor, add a squeeze of lemon juice just before serving. You can also adjust the amount of chili powder to control the spiciness of the dish. For a creamier sauce, use full-fat coconut milk instead of heavy cream.
