Suya Spiced Grilled Chicken Thighs

These Suya Spiced Grilled Chicken Thighs are tender, smoky, and infused with a rich West African peanut and spice blend, perfect for a flavorful dinner or weekend barbecue.

  • 4 bone-in, skin-on chicken thighs
  • 2 tbsp suya spice mix (ground peanuts, cayenne, paprika, garlic powder, onion powder, ginger powder, salt)
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 1 lime, juiced
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. In a small bowl, mix the suya spice blend with vegetable oil and lime juice to form a paste.
  2. Pat dry the chicken thighs and rub the suya spice paste all over the chicken, ensuring even coating.
  3. Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.
  4. Preheat your grill to medium-high heat.
  5. Grill the chicken thighs skin-side down for 6-8 minutes, then flip and grill for another 6-8 minutes until cooked through and internal temperature reaches 165°F (74°C).
  6. Remove from the grill and let rest for 5 minutes.
  7. Garnish with fresh cilantro or parsley if desired and serve.

Notes

For extra smoky flavor, add soaked wood chips to your grill or finish the chicken under a broiler for 1-2 minutes to crisp the skin.
