Fresh Strawberry Pie on a Picnic Blanket

This classic Strawberry Pie is bursting with fresh strawberry flavor in a flaky, buttery crust. A perfect dessert for summer gatherings and guaranteed to be a crowd-pleaser!

  • 1 pre-made pie crust
  • 6 cups fresh strawberries, hulled and sliced
  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ cup water
  • 2 tablespoons lemon juice
  • 2 tablespoons butter, cut into small pieces
  • Optional: Whipped cream, for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place pie crust in a 9-inch pie plate.
  3. In a large bowl, gently toss the sliced strawberries with sugar.
  4. In a small bowl, whisk together cornstarch and water until smooth.
  5. Pour the cornstarch mixture over the strawberries and toss to coat.
  6. Add the lemon juice and butter to the strawberry mixture.
  7. Pour the strawberry filling into the prepared pie crust.
  8. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the crust browns too quickly, cover the edges with foil.
  9. Let the pie cool completely before slicing and serving.
  10. Optional: Serve with whipped cream.

Notes

For a richer flavor, use a homemade pie crust. You can also add a glaze to the top of the pie after it has cooled.
