Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, lemon juice, and lemon zest; mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the chopped strawberries, being careful not to overmix.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Remove from oven and let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Once cooled, dust cookies lightly with powdered sugar before serving.
