Strawberry Greek Yogurt Muffins

Fluffy and moist Strawberry Greek Yogurt Muffins bursting with fresh fruit flavor, perfect for a healthy breakfast or snack.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix Greek yogurt, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined. Avoid overmixing.
  5. Gently fold in chopped strawberries.
  6. Divide batter evenly among muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra crunch, sprinkle the tops with a little raw sugar before baking or serve warm with a light spread of honey.
