  • 4 large Russet potatoes, cut into wedges
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss potato wedges with olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper until evenly coated.
  3. Arrange the potatoes in a single layer on the prepared baking sheet.
  4. Bake for 35-40 minutes, turning halfway through, until golden brown and crispy.
  5. Optional: Sprinkle with grated Parmesan cheese during the last 5 minutes of baking.
  6. Remove from oven and garnish with chopped fresh parsley before serving.
