Spinach Garlic Chicken

Spinach Garlic Chicken is a flavorful and healthy skillet dish featuring tender chicken breasts cooked with fresh garlic and vibrant spinach, perfect for a quick weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 3 cups fresh spinach, washed and drained
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Juice of half a lemon

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in chicken broth and lemon juice, scraping the bottom of the pan to deglaze.
  6. Add fresh spinach and cook until wilted, about 2-3 minutes.
  7. Return the chicken breasts to the skillet and spoon the spinach and garlic sauce over the top. Cook for an additional 2 minutes to let flavors combine.
  8. Serve hot, garnished with extra lemon juice if desired.

Notes

For added richness, stir in a tablespoon of grated Parmesan cheese into the spinach mixture before serving.
