  • 1 kg chicken pieces
  • 4 large tomatoes
  • 3 red bell peppers
  • 2 scotch bonnet peppers
  • 1 large onion (divided)
  • 3 cloves garlic
  • 1 thumb-sized ginger piece
  • 1/4 cup vegetable oil
  • 2 teaspoons tomato paste
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Blend tomatoes, red bell peppers, scotch bonnet peppers, half the onion, garlic, and ginger until smooth.
  2. Heat oil in a large pot over medium heat; sauté remaining onion until translucent.
  3. Add the tomato paste and cook for 3 minutes, stirring frequently.
  4. Pour the blended pepper mixture into the pot and cook for 10-15 minutes until the sauce thickens and the oil begins to separate.
  5. Season with thyme, curry powder, salt, and black pepper.
  6. Add chicken pieces to the stew, stirring to coat well.
  7. Pour in chicken broth, cover, and simmer for 30-40 minutes until the chicken is cooked through and tender.
  8. Check seasoning and adjust salt or spice levels as desired.
  9. Garnish with chopped fresh parsley before serving.
