  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons lime juice
  • 1 tablespoon orange juice
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon salt
  • Pinch of cayenne pepper (optional, for extra heat)

Instructions

  1. Rinse the cranberries and pick out any that are soft or discolored.
  2. In a food processor, pulse the cranberries until coarsely chopped. Do not over-process, you want some texture.
  3. Transfer the chopped cranberries to a medium bowl.
  4. Add the red onion, cilantro, jalapeño, lime juice, orange juice, honey (or maple syrup), salt, and cayenne pepper (if using) to the bowl.
  5. Stir well to combine all ingredients.
  6. Taste and adjust seasonings as needed. Add more jalapeño for extra heat, or more honey for sweetness.
  7. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  8. Serve with tortilla chips, crackers, or as a topping for grilled chicken or fish.

Notes

For a smoother salsa, pulse the cranberries in the food processor a bit longer. Serve chilled for the best flavor and texture.
