  • 1 pound elbow macaroni
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 4 cups shredded cheddar cheese
  • 1/2 cup blue cheese crumbles
  • 1/2 cup buffalo wing sauce, plus more for drizzling
  • 1 pound cooked chicken, shredded
  • 2 tablespoons ranch dressing
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cook macaroni according to package directions. Drain well.
  3. In a large saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth.
  4. Bring to a simmer, stirring constantly, until thickened.
  5. Remove from heat and stir in cheddar cheese and blue cheese until melted and smooth.
  6. Stir in buffalo wing sauce, shredded chicken, and ranch dressing. Season with salt and pepper to taste.
  7. Add cooked macaroni to the cheese sauce and stir to coat.
  8. Pour into the prepared baking dish and spread evenly.
  9. Bake for 20-25 minutes, or until golden brown and bubbly.
  10. Let cool slightly before serving. Garnish with chopped green onions, if desired, and drizzle with extra buffalo sauce.

Notes

For an extra crispy top, sprinkle breadcrumbs over the mac and cheese before baking. Serve with a side of celery sticks and blue cheese dressing for dipping.
