Spanish Churro-Inspired Pancakes

Delight in fluffy pancakes infused with cinnamon and sugar, inspired by traditional Spanish churros, perfect for a sweet breakfast treat or dessert.

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter (for cooking)
  • 1/4 cup sugar mixed with 1 teaspoon cinnamon (for topping)
  • Maple syrup or dulce de leche (optional, for serving)

Instructions

  1. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  2. In another bowl, beat the egg with buttermilk, melted butter, and vanilla extract until combined.
  3. Pour wet ingredients into the dry ingredients and gently stir until just combined; do not overmix.
  4. Heat a skillet or griddle over medium heat and melt a little butter.
  5. Pour 1/4 cup batter per pancake onto the skillet and cook until bubbles begin to form on the surface, about 2-3 minutes.
  6. Flip and cook the other side until golden brown, about 1-2 minutes more.
  7. Remove pancakes and immediately sprinkle the cinnamon sugar mixture on top so it sticks.
  8. Serve warm with maple syrup or dulce de leche, if desired.

Notes

For extra churro authenticity, try drizzling your pancakes with warm dulce de leche and sprinkle some chopped nuts for added texture.
