A Delicious Bowl of Southwest Chicken Soup

This hearty Southwest Chicken Soup is packed with flavor and wholesome ingredients. It’s a comforting and easy-to-make meal perfect for a chilly evening.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 jalapeño, seeded and minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 4 cups chicken broth
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 pound cooked chicken, shredded
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, sour cream, tortilla chips

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, bell pepper, and jalapeño and cook for another 3 minutes, until slightly tender.
  3. Stir in chili powder, cumin, and smoked paprika and cook for 1 minute, until fragrant.
  4. Pour in chicken broth, black beans, corn, and diced tomatoes and green chilies. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add shredded chicken and cook for another 5 minutes, until heated through. Season with salt and pepper to taste.
  6. Serve hot, topped with your favorite toppings like avocado, cilantro, sour cream, or tortilla chips.

Notes

For a spicier soup, leave the seeds in the jalapeño or add a pinch of cayenne pepper. You can also use rotisserie chicken to save time.
