Snickerdoodle Banana Bread combines the warm cinnamon-sugar flavors of classic snickerdoodles with moist, ripe bananas for a delightful twist on traditional banana bread.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cream of tartar
  • For the cinnamon-sugar topping:
    2 tablespoons granulated sugar
    1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cream of tartar.
  3. In a large bowl, combine mashed bananas, melted butter, sugar, eggs, and vanilla extract. Mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. In a small bowl, mix the topping sugar and cinnamon. Sprinkle evenly over the batter.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor, drizzle a simple vanilla glaze over slices or serve with a spread of cream cheese.
