  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1/2 cup kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a small bowl, whisk together garlic, olive oil, lemon juice, oregano, thyme, salt, and pepper.
  3. Pour the mixture over the chicken, ensuring all pieces are coated.
  4. Pour chicken broth around the chicken in the slow cooker.
  5. Add the kalamata olives on top.
  6. Cover and cook on low for 4-6 hours or until chicken is tender and fully cooked.
  7. Before serving, sprinkle with feta cheese and fresh parsley.
  8. Serve warm with rice or pita bread.

Notes

For extra flavor, marinate the chicken in the lemon-garlic mixture for 1 hour before cooking. Serve with a side of Greek salad or roasted vegetables.
