Slow Cooker Chicken Posole is a flavorful, hearty Mexican stew made with tender chicken, hominy, and a rich blend of chilies and spices, perfect for a comforting meal.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) white hominy, drained and rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 can (10 oz) diced green chilies
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: sliced radishes, diced avocado, shredded cabbage, and tortilla chips

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add chopped onion, minced garlic, drained hominy, diced green chilies, cumin, oregano, chili powder, smoked paprika, salt, and pepper.
  3. Pour in the chicken broth, making sure ingredients are mostly submerged.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  5. Remove the chicken and shred it using two forks, then return it to the slow cooker and stir well.
  6. Add lime juice and adjust seasoning with salt and pepper if needed.
  7. Serve hot, garnished with fresh cilantro and your choice of optional toppings.

Notes

For extra depth, toast dried chilies and blend them into the broth before cooking, or serve with warm corn tortillas for a complete meal.
