  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Orange zest for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  4. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  5. Add fresh cranberries, orange juice, honey, and thyme to the skillet. Stir and bring to a simmer.
  6. Cook the sauce for about 8-10 minutes until the cranberries burst and the sauce thickens slightly.
  7. Return the chicken to the skillet, spooning the sauce over the top. Simmer together for 2 minutes to combine flavors.
  8. Garnish with fresh orange zest and serve warm.

Notes

For extra flavor, serve with steamed rice or roasted vegetables. You can also add a splash of balsamic vinegar to the sauce for depth.
