This Sausage Sweet Potato Kale Soup is a hearty and flavorful one-pot meal perfect for a chilly evening. Packed with Italian sausage, sweet potatoes, and kale, it’s a healthy and delicious way to warm up.

Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 5 ounces fresh kale, chopped
  • Salt and pepper to taste
  • Olive oil (optional, for browning sausage)

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. If the sausage is lean, add a tablespoon of olive oil to the pot first. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in the diced sweet potatoes, chicken broth, diced tomatoes, thyme, and red pepper flakes (if using).
  4. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the sweet potatoes are tender.
  5. Stir in the chopped kale and cook until wilted, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

For a creamier soup, add a splash of heavy cream or coconut milk at the end. You can also top with grated Parmesan cheese or a dollop of sour cream.
