  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 9 ounces cheese tortellini
  • 2 cups fresh spinach, roughly chopped
  • Grated Parmesan cheese, for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it up with a spoon as it cooks. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and diced tomatoes. Stir in the Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add the cheese tortellini to the soup and cook according to package directions, usually about 3-5 minutes, or until tender.
  5. Stir in the fresh spinach until it wilts, about 1 minute.
  6. Serve hot, garnished with grated Parmesan cheese, if desired.

Notes

For a spicier soup, use hot Italian sausage. You can also add other vegetables like carrots, celery, or zucchini.
