Sausage and Courgette Pasta

A hearty and flavorful Italian-inspired dish combining savory sausage with tender courgettes and al dente pasta, perfect for a quick and satisfying weeknight dinner.

  • 300g dried pasta (penne or rigatoni)
  • 300g Italian sausage, casings removed
  • 2 medium courgettes, sliced
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Meanwhile, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
  3. Add the minced garlic and cook for another 1 minute until fragrant.
  4. Add the sausage, breaking it up with a spoon, and cook until browned and cooked through, about 6-8 minutes.
  5. Add the sliced courgettes to the skillet and sauté until tender, about 5 minutes. Season with salt and pepper.
  6. Toss the cooked pasta into the skillet with the sausage and courgettes. Mix well to combine and heat through.
  7. Remove from heat and stir in the grated Parmesan cheese.
  8. Serve garnished with fresh basil or parsley.

Notes

For an extra kick, add red pepper flakes when cooking the garlic, or serve with a drizzle of chili oil.
