These Salted Caramel Apple Crumble Bars are a delightful autumn treat! A buttery crumble base and topping sandwich a layer of sweet and tart apples cooked in a rich salted caramel sauce.

  • For the Crumble Base and Topping:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) cold unsalted butter, cut into cubes
  • 1/2 cup rolled oats
  • For the Apple Filling:
  • 4 medium apples (such as Honeycrisp or Gala), peeled, cored, and diced
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons lemon juice
  • For the Salted Caramel Sauce:
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream, warmed
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon sea salt, or to taste

Instructions

  1. Make the Salted Caramel Sauce: In a medium saucepan, combine sugar and water. Cook over medium heat, without stirring, until the sugar dissolves and turns a deep amber color.
  2. Remove from heat and carefully whisk in the warm heavy cream and butter. Stir until smooth. Add salt and adjust to taste. Let cool slightly.
  3. Make the Crumble Base and Topping: In a large bowl, whisk together flour, brown sugar, baking soda, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the rolled oats.
  4. Press half of the crumble mixture firmly into the bottom of a 8×8 inch baking pan lined with parchment paper, leaving an overhang for easy removal.
  5. Make the Apple Filling: In a large bowl, combine diced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat.
  6. Pour the apple filling evenly over the crumble base. Drizzle the salted caramel sauce over the apple filling.
  7. Sprinkle the remaining crumble mixture evenly over the caramel and apples.
  8. Bake: Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into bars and serve.
