Salsa Verde Chicken is a vibrant, tangy, and tender dish featuring chicken simmered in a zesty tomatillo sauce, perfect for a quick and flavorful Mexican-inspired meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3 minutes.
  2. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Season the chicken breasts with salt, pepper, and ground cumin.
  4. Add the chicken breasts to the skillet and brown on both sides, about 3-4 minutes per side.
  5. Pour in the salsa verde and chicken broth, making sure the chicken is mostly covered with the sauce.
  6. Reduce heat to low, cover the skillet, and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
  7. Remove the chicken from the skillet and let rest for a few minutes. If desired, simmer the sauce uncovered for a few minutes to thicken slightly.
  8. Serve the chicken topped with the salsa verde sauce, garnished with fresh cilantro and lime wedges.

Notes

For a creamier twist, add a splash of sour cream or Mexican crema to the sauce before serving. This dish pairs beautifully with rice, tortillas, or a fresh salad.
