  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • For the Cream Cheese Frosting:
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together the oil, buttermilk, eggs, red food coloring, vanilla, and vinegar until fully combined.
  4. Slowly add the dry ingredients to the wet ingredients, mixing until smooth and well incorporated.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the frosting, beat cream cheese and butter together until smooth and creamy.
  9. Add powdered sugar gradually, then vanilla extract, beating until light and fluffy.
  10. Once cakes are completely cool, frost the first layer, add the second cake layer on top, and cover the entire cake with frosting.
  11. Optional: Garnish with fresh strawberries or heart-shaped sprinkles for a festive touch.

Notes

For an extra festive touch, chill the cake for an hour before serving to let the frosting set perfectly.
