This Ranch Taco Party Bowl combines zesty ranch flavors with seasoned taco ingredients for a fresh, easy, and crowd-pleasing meal perfect for gatherings or weeknight dinners.

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1/2 cup ranch dressing
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef or turkey and cook until browned, about 6-8 minutes.
  2. Drain excess fat and stir in taco seasoning with a little water according to package instructions. Simmer until thickened, about 3-4 minutes.
  3. In serving bowls, layer cooked rice as the base, then add black beans and corn evenly.
  4. Add the seasoned meat on top of the beans and corn layer.
  5. Top with shredded lettuce, diced tomatoes, shredded cheddar, black olives, and green onions.
  6. Drizzle ranch dressing generously over the entire bowl.

Notes

For a vegetarian version, substitute the meat with sautéed mushrooms or seasoned tofu and use a vegan ranch dressing.
