Potato Soup

Bowl of Comforting Potato Soup

This creamy and comforting potato soup is the perfect dish for a chilly day. Simple to make with pantry staples, it’s a hearty and satisfying meal the whole family will love.

Ingredients

  • 6 medium potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, bacon bits, sour cream, chives

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  2. Add potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  3. Remove from heat and carefully blend the soup using an immersion blender until smooth. Alternatively, you can transfer the soup to a regular blender in batches.
  4. Return the soup to the pot. Stir in heavy cream, salt, and pepper. Heat through, but do not boil.
  5. Serve hot with your favorite toppings.

Notes

For a thicker soup, mash some of the potatoes with a fork before blending. You can also add a dollop of sour cream or Greek yogurt for extra richness.
