Poppy seed chicken casserole is a creamy, comforting baked dish combining tender chicken, crunchy topping, and a subtle hint of poppy seeds, perfect for a family dinner.

Ingredients

  • 3 cups cooked chicken, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup crushed Ritz crackers
  • 2 tablespoons poppy seeds
  • 1 cup shredded cheddar cheese
  • 2 tablespoons melted butter
  • 1/4 cup chopped green onions (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together cream of chicken soup, sour cream, mayonnaise, poppy seeds, salt, and pepper until well combined.
  3. Add shredded chicken and green onions (if using) to the mixture and stir until coated.
  4. Transfer mixture to a greased 9×13 inch baking dish.
  5. In a separate bowl, combine crushed Ritz crackers, shredded cheddar cheese, and melted butter; sprinkle evenly over the chicken mixture.
  6. Bake uncovered for 30-35 minutes or until the casserole is bubbly and the topping is golden brown.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra crunch, add chopped pecans to the cracker topping or serve with a fresh green salad for a balanced meal.
