Pollo Asado

Pollo Asado is a flavorful Mexican grilled chicken marinated with citrus and spices, delivering a juicy and aromatic meal perfect for any occasion.

  • 4 chicken leg quarters
  • 3 cloves garlic, minced
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, combine garlic, orange juice, lime juice, olive oil, chili powder, cumin, oregano, smoked paprika, salt, and pepper to create the marinade.
  2. Place the chicken leg quarters in a large resealable bag or container and pour the marinade over the chicken. Seal and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and grill for 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with a nice char.
  5. Remove from the grill and let rest for 5 minutes before serving.
  6. Garnish with fresh cilantro and serve.

Notes

For extra smoky flavor, consider using a charcoal grill or adding wood chips during grilling.
