Pineapple Cowboy Candy

Pineapple Cowboy Candy is a sweet and tangy homemade preserve bursting with pineapple, peppers, and a hint of spice, perfect for adding a flavorful kick to sandwiches or cheese boards.

  • 1 fresh pineapple, peeled and diced
  • 2 cups granulated sugar
  • 1/2 cup apple cider vinegar
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 jalapeño peppers, seeded and finely chopped
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Instructions

  1. Combine pineapple, sugar, and apple cider vinegar in a large pot. Stir well and let sit for 30 minutes to macerate.
  2. Add diced bell peppers, jalapeños, red pepper flakes, ginger, turmeric, cinnamon, cloves, and salt to the pot.
  3. Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
  4. Simmer uncovered, stirring frequently, until the mixture thickens and the liquid reduces to a syrupy consistency, about 45-60 minutes.
  5. Test the candy by placing a spoonful on a cold plate; if it wrinkles when pushed, it’s ready.
  6. Remove from heat and carefully ladle the hot candy into sterilized jars, leaving 1/4 inch headspace.
  7. Seal jars and let cool to room temperature before storing in the refrigerator.

Notes

For an extra smoky flavor, try adding a teaspoon of smoked paprika or serve alongside sharp cheddar cheese for a delicious contrast.
