Peppermint Meltaway Cookies

Delicate peppermint meltaway cookies with a tender, buttery texture and a refreshing hint of mint—perfect for the holiday season or any time you crave a light, festive treat.

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup finely crushed peppermint candies or candy canes

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter until creamy.
  3. Add powdered sugar and vanilla extract to the butter and mix until smooth and fluffy.
  4. Gradually add the flour and salt, mixing until a soft dough forms.
  5. Fold in the crushed peppermint candies gently to distribute evenly.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
  7. Flatten each ball slightly with the bottom of a glass or your hand.
  8. Bake for 15-18 minutes until the edges are set but centers remain soft.
  9. Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra festive touch, dip half of each cookie in melted white chocolate and sprinkle with additional crushed peppermint after cooling.
