This One-Pan Cranberry Rosemary Chicken combines tender chicken breasts with a vibrant cranberry rosemary sauce, perfect for an effortless and flavorful weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 2 tablespoons fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 1/4 cup honey
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Add the chicken breasts and sear until golden brown, about 3-4 minutes per side.
  5. Add minced garlic and chopped rosemary to the skillet, sauté for 1 minute until fragrant.
  6. Pour in chicken broth, honey, and fresh cranberries, stirring to combine.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
  8. Remove from oven and let the chicken rest for 5 minutes before serving. Spoon some cranberry sauce over the top.
