Old-Fashioned Gumdrop Nougat Candy

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites, room temperature
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups assorted gumdrops, chopped
  • 1/2 cup chopped toasted almonds (optional)
  • Powdered sugar for dusting

Instructions

  1. Line an 8×8 inch pan with parchment paper and lightly dust with powdered sugar.
  2. In a medium saucepan, combine sugar, corn syrup, and water over medium heat. Stir until sugar dissolves, then bring to a boil without stirring until mixture reaches 250°F (hard ball stage) on a candy thermometer.
  3. Meanwhile, beat egg whites and salt in a large bowl until stiff peaks form.
  4. Slowly and carefully pour the hot sugar syrup into the egg whites in a thin stream while continuing to beat at high speed.
  5. Continue to beat the mixture until it becomes thick, glossy, and cools slightly (about 7-10 minutes).
  6. Beat in vanilla extract.
  7. Fold in chopped gumdrops and toasted almonds if using.
  8. Pour the nougat mixture into the prepared pan and smooth the top.
  9. Let it set at room temperature for at least 4 hours or overnight.
  10. Once firm, dust with powdered sugar, cut into squares, and enjoy your old-fashioned gumdrop nougat candy.

Notes

For an extra festive touch, roll the nougat pieces in crushed candy canes before cutting to add a peppermint flavor and decorative look.
