  • 1 1/2 cups granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups milk
  • 3 large egg yolks, lightly beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 baked 9-inch pie crust
  • Whipped cream, for topping (optional)

Instructions

  1. In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens.
  4. Reduce heat to low and cook for 1 minute more, stirring constantly.
  5. Remove from heat. Gradually whisk about 1/2 cup of the hot mixture into the egg yolks, then whisk the egg yolk mixture back into the saucepan.
  6. Cook over low heat for 1 minute, stirring constantly.
  7. Remove from heat and stir in the butter and vanilla extract.
  8. Pour the chocolate filling into the baked pie crust.
  9. Cover the surface of the pie with plastic wrap to prevent a skin from forming.
  10. Refrigerate for at least 3 hours, or until completely set.
  11. Serve chilled with whipped cream, if desired.

Notes

For a richer flavor, use dark chocolate cocoa powder. You can also add a pinch of cinnamon to the filling for a hint of spice.
