No Bake Classic Woolworth Cheesecake

This No Bake Classic Woolworth Cheesecake is a creamy, smooth dessert with a buttery biscuit base, perfect for any occasion without the need for baking.

Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 500g cream cheese, softened
  • 200ml thickened cream
  • 150g powdered sugar
  • 2 tsp vanilla extract
  • 2 tsp lemon juice

Instructions

  1. Combine crushed biscuits and melted butter in a bowl until evenly mixed.
  2. Press the biscuit mixture firmly into the base of a 20cm springform pan and refrigerate for 30 minutes.
  3. In a separate bowl, beat cream cheese until smooth, then add powdered sugar, vanilla extract, and lemon juice. Mix well.
  4. Whip thickened cream to soft peaks and gently fold into the cream cheese mixture until combined.
  5. Pour the filling over the chilled biscuit base and smooth the top.
  6. Refrigerate the cheesecake for at least 4 hours or overnight until set.
  7. Remove from springform pan, slice, and serve chilled.

Notes

For an extra touch, garnish with fresh berries or a drizzle of berry compote before serving.
