No-Bake Chocolate Peanut Butter Pie

This No-Bake Chocolate Peanut Butter Pie is a decadent and easy dessert that requires no oven! A creamy peanut butter filling sits atop a chocolate cookie crust, topped with chocolate ganache.

  • Chocolate Cookie Crust:
  • 1 ½ cups chocolate cookie crumbs (about 24 chocolate sandwich cookies, filling removed)
  • 5 tablespoons unsalted butter, melted
  • Peanut Butter Filling:
  • 8 ounces cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • Chocolate Ganache:
  • 4 ounces semi-sweet chocolate, chopped
  • ½ cup heavy cream

Instructions

  1. Make the crust: In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch pie plate.
  2. Make the peanut butter filling: In a large bowl, beat the cream cheese and peanut butter until smooth and creamy. Gradually add the powdered sugar and beat until combined. Pour in the heavy cream and vanilla extract and beat until light and fluffy.
  3. Assemble the pie: Pour the peanut butter filling into the prepared crust and spread evenly. Refrigerate for at least 2 hours to set.
  4. Make the chocolate ganache: Place the chopped chocolate in a heatproof bowl. In a saucepan, heat the heavy cream until simmering. Pour the hot cream over the chocolate and let it sit for 1 minute. Whisk until smooth and glossy.
  5. Pour the chocolate ganache over the peanut butter filling and spread evenly. Refrigerate for at least 30 minutes to allow the ganache to set.
  6. Slice and serve chilled.

Notes

For an extra touch, sprinkle chopped peanuts or chocolate shavings on top of the ganache before it sets.
