  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup long-grain white rice, uncooked
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1/2 cup shredded cheddar cheese, or more to taste
  • Optional toppings: sour cream, avocado, cilantro

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Stir in the diced tomatoes (undrained), black beans, rice, beef broth, and taco seasoning. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Remove from heat and stir in the shredded cheddar cheese. Let it melt slightly.
  6. Serve hot, topped with your favorite toppings such as sour cream, avocado, and cilantro.

Notes

For a spicier dish, add a pinch of red pepper flakes or a diced jalapeño to the skillet with the onion and bell pepper.
