  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 5 ounces fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute.
  4. Pour in chicken broth and bring to a simmer.
  5. Return chicken to the pot. Reduce heat and simmer for 15 minutes, or until chicken is cooked through.
  6. Stir in heavy cream and spinach. Cook until spinach is wilted, about 2-3 minutes.
  7. Stir in Parmesan cheese and season with salt and pepper to taste.
  8. Serve hot, garnished with extra Parmesan cheese.

Notes

For an extra touch of flavor, serve with crusty bread for dipping. You can also add a squeeze of lemon juice for brightness.
