Sweet and savory maple roasted parsnips infused with fresh thyme make a perfect side dish that is both comforting and flavorful.

Ingredients

Scale
  • 1 lb parsnips, peeled and cut into sticks
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the parsnip sticks with olive oil, maple syrup, thyme, salt, and pepper until evenly coated.
  3. Spread the parsnips in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the oven for 25-30 minutes, flipping once halfway through, until the parsnips are golden and tender.
  5. Remove from the oven and let cool slightly before serving.

Notes

For extra crispiness, broil the parsnips for the last 2 minutes, watching carefully to avoid burning.
